Southern Football, Coffee and Casseroles!

  

Football season is upon us.  I don’t have an athletic bone in my body, but I love football and am an avid fan for my favorite teams.  One of my favorite sights is seeing the football lights on the high school football field on Friday nights. Driving up to that sight still brings a smile to my face and warms my heart.

When my son was in high school, many times his fellow teammates would spend Friday night at our house after the football game.  There is nothing like the hungry appetites of young teen-age boys after a game. This hearty breakfast casserole is the perfect answer for their breakfast.  It can be made in advance and baked when needed. If you add a few dozen donuts, some fruit, and a fresh pot of coffee you can easily have the perfect breakfast meal.

Enjoy a piping hot cup of your favorite blend of Southern Coffee Services coffee while you enjoy watching the fruits of your labor. Don’t forget a few bags of ice for those Saturday morning aches and pains.

 

BREAKFAST CASSEROLE RECIPE

  • 1 lb. ground sausage
  • 8 slices white bread
  • 8 oz. cheddar cheese, shredded
  • 8 eggs
  • 2 cups milk
  • 1 tsp. dry mustard
  • ¼ tsp. salt
  • ½ tsp. pepper

Spray a 9 x 12 inch baking dish with nonstick cooking spray.  In a large skillet, cook the sausage until browned and crumbly; drain well.  Tear the bread into bite-sized pieces and place in baking dish; top with sausage and cheese.  

In a large bowl, whisk together the remaining ingredients; carefully pour mixture over cheese.  Bake for 40 -45 minutes at 350 degrees. Let stand for 10 minutes before cutting to serve. 

Simple as that.
