Southern Sweet Potato Waffles
Mother's Day is just around the corner y'all! Does your mom love brunch but also enjoys laid back mornings at home? This Mother's Day, treat mom to a homemade brunch! You don't even have to get out of your pajamas to make these amazing sweet potato waffles. Brew up a pot of Morning Roast Coffee and let's get started!
Recipe:
1 1/2 cups Unbleached All Purpose Flour
1 cup. Rolled Oats
1 tablespoon. Baking powder
1 teaspoon. Cinnamon
1/4 teaspoon. Salt
2 eggs
1 cup Whole Milk
1/2 cup Greek Yogurt
3 teaspoons Melted Butter
4 ounces Mashed Sweet Potato
2 tablespoons Maple Syrup
Directions:
In a large bowl, whisk together dry ingredients until combined. Whisk in eggs, milk, yogurt, butter, sweet potatoes, and maple syrup until well combined. Set aside to rest about 10 minutes while heating waffle iron. If batter is too thick at 1-2 Tablespoons of milk. Pour roughly 1/4 batter onto iron, close, and cook according to waffle iron directions.
Sprinkle waffles with toppings of your choice (we used chopped pecans) and pour on the maple syrup!
